Couscous with Herbs and Feta

> 1 cup couscous
> 6 green onions
> 1/4 cup mint
> 1/2 cup cilantro
> 3/4 cup parsley
> 1 cucumber
> 1 lime
> 3 tbsp extra virgin olive oil
> 1 (8 oz) pkg feta cheese
> 1 cup roasted salted almonds


Prepare couscous according to package directions. Meanwhile, slice the green onions, setting the sliced green tops in a separate bowl. Finely chop the mint, and roughly chop the cilantro and parsley. Peel and dice the cucumber into ½-inch cubes.
Transfer cooked couscous to a large bowl. Allow to cool slightly. Zest and juice the lime, and fold into the couscous. Stir in the olive oil. Cut feta into cubes and add to the couscous. Coarsely chop the almonds. Add herbs, white part of the green onion, and cucumbers. Season with salt (in moderation) and pepper. Stir to combine. Top with green onions and almonds.
