Into 2 medium bowls, separate the whites and yolks of the eggs. Whisk whites until foamy, then whisk yolks until smooth.

In a medium nonstick skillet, melt the butter on medium. Add whites and cook 2–3 min., until just set, stirring constantly.

Add yolks. Cook 1 min., until desired firmness, stirring constantly. Remove from heat. Season with salt and pepper.
