Ingredients

3/4 (16 oz) box orzo

1 (15.5 oz) can cannellini beans

1 cup sugar snap peas

1 cup radishes
>
3/4 cup pitted Kalamata olives
>
1 cup tzatziki yogurt dip
>
2 tbsp lemon juice
>
1/2 (10 oz) bag matchstick (shredded) carrots

Bring a large pot of salted water to a boil on high. Add orzo and cook according to package directions. Add orzo to colander, rinse with cold water until cool, and drain very well.

Meanwhile, drain and rinse beans. Thinly slice sugar snap peas and radishes. Halve olives.

To a large bowl, add tzatziki, lemon juice, salt, and pepper. Stir in orzo. Fold in the carrots, beans, sugar snap peas, radishes, and olives and mix until well combined.
