Ingredients

1 lb penne

1 lb asparagus

2 tbsp olive oil

1 tbsp minced garlic
>
1 large shallot, thinly sliced
>
1/2 tsp crushed red pepper
>
2 (3.5 oz) pkgs sliced shiitake mushrooms

1 cup half & half

Cook the pasta according to package directions. Meanwhile, trim the asparagus. Cut on an angle into 1-inch lengths. Add asparagus to water 1 min. before pasta is done. Reserve ½ cup cooking liquid before draining.

Meanwhile, in a large pot, heat the oil on medium. Add the garlic, shallot, and crushed red pepper. Cook 1 min., stirring often. Add the mushrooms and season with salt. Cook 5–7 min., until golden brown, stirring occasionally.

Stir the half & half into the pot and simmer 2 min. Add drained pasta and asparagus. Toss until well combined. Add reserved cooking water, if needed. Season with salt and pepper to taste.
