1 tbsp curry powder

1/2 cup halved red grapes

1/4 cup sliced almonds

2 tbsp green onions

2 tbsp finely chopped cilantro leaves

1 small jalapeño, seeded (optional)

2 (6-inch) whole-wheat or white pita pockets

In a medium bowl, gently stir the chicken salad and curry powder to combine. Stir in the grapes, nuts, green onions, and cilantro. Finely chop the jalapeño, if using, and stir into chicken salad. Season with salt and pepper.

Toast the pitas. Cut each pita in half and stuff with the lettuce, tomato, and chicken salad.
