2 tbsp Dijon mustard

1 tbsp maple syrup

1 tsp garlic powder

1/4 cup olive oil

1/2 red onion

2 (12 oz) pkgs halved Brussels sprouts

Preheat oven to 400°F. In a large bowl, whisk the mustard, maple syrup, garlic powder, and oil to combine. Thinly slice the red onion and add to the mustard mixture, along with the Brussels sprouts. Toss to coat.

Spread vegetables in a single layer on a large baking sheet and roast 35–40 min., until sprouts are tender and caramelized, stirring halfway through.
