Air-Fried Breakfast Taquitos

Ingredients

> 4 large eggs, scrambled
> 1/2 cup reduced-fat shredded Cheddar cheese
> 2 slices fully cooked bacon, chopped (optional)
> 12 mini flour or street taco tortillas
> Cooking spray

For Serving (Optional):

> Mild salsa
> Sour cream
> Guacamole

Preheat air fryer to 375°F. In a small bowl, combine the scrambled eggs, shredded cheese, and bacon, if using. Wrap the tortillas in a damp paper towel and microwave 10 sec., until soft and pliable. Spread 1½ tbsp egg mixture down center of each tortilla. Fold each tortilla over itself and roll into taquito shape.

Add taquitos seam-side down to preheated air fryer, making sure they are not touching, working in batches if necessary. Spray taquitos with the cooking spray. Cook 6–7 min., until golden and crispy. Flip taquitos and spray again with cooking spray. Cook 4–5 min., until crispy. Serve with the salsa, sour cream, and guacamole, if desired.

Tips

To serve later, refrigerate in an airtight container for up to 5 days or freeze up to 2 months.
