Duchess Potato Casserole

This rich, beautiful holiday side is an easy upgrade to mashed potatoes. It’s also five ingredients and comes together in a snap, no peeling or mashing required.

Ingredients

> Butter-flavored cooking spray
> 8 cups whole milk
> 6 egg yolks
> 1 1/2 cups grated Parmesan cheese
> 5 cups instant mashed potatoes

Preheat oven to 400°F. Grease a 2-qt baking dish with the cooking spray. In a medium saucepan, heat the milk on medium 5 min., until steaming (do not boil). In a large heatproof bowl, combine the egg yolks and cheese. Season with salt and pepper. Stir 1 cup warmed milk into egg mixture until combined. Add remaining warmed milk to egg mixture. Stir in the instant mashed potatoes.

Reserve 2 cups potato mixture. Add remaining potatoes to prepared baking dish and smooth into an even layer. Working in batches if needed, transfer reserved potatoes to a pastry bag fitted with a large star tip. Pipe large swirls on top of potatoes in dish to make a decorative pattern.

Generously spray top with cooking spray. Bake 30–35 min., until potatoes are golden brown, rotating dish halfway through. If desired, broil 2–3 min. to brown the top.

Tips

Sprinkle chopped fresh chives over top for a pop of color.

Don’t want to pipe the top? Add all the potato mixture to the prepared baking dish and gently drag a fork through the top to create texture.
