> 1 (28 oz) can whole tomatoes
> 1 small red onion, chopped
> 1 1/2 cups tzatziki
> 1/3 cup olive oil
> 3 tbsp sherry vinegar
Add the tomatoes, onion, and tzatziki to a blender or large food processor. Blend until smooth, about 2 min.
While blender is running, slowly drizzle in the oil and vinegar. Continue blending until smooth, scraping down the sides of the blender as needed.
Season with salt and pepper to taste. Serve at room temperature or refrigerate until ready to serve.
