Easy Italian Wedding Risotto

Transforming Italian chicken sausage into meatballs and using store-bought cooked rice are two easy hacks for this cozy one-pot, five-ingredient dinner.

Ingredients

> 1 (16 oz) pkg Nature's Promise ® Sweet Italian Chicken with Kale Sausage
> 2 (15.9 oz) pkgs Nature's Promise ® Precooked Brown Rice
> 3 cups low-sodium chicken broth
> 1 (6 oz) bag baby spinach
> 3 tbsp grated Parmesan cheese, plus more to garnish

To Garnish (Optional):

> Chopped chives

Steps

Remove the sausage from the casings and roll into 1-inch meatballs. Transfer to a plate.

Grease a Dutch oven and heat on medium-high. Cook meatballs 4–5 min., until browned. Break up the rice in packages. Add rice and the broth to pot. Season with salt and pepper. Cook about 10 min., until rice is tender and most of broth has been absorbed, stirring occasionally.

Stir in the spinach and cook about 2 min., until wilted. Season with salt and pepper. Remove from heat and stir in the cheese. Garnish with more cheese, if desired.

Tips

Garnish with chopped chives, if desired.
