Easy Migas with Chorizo and Black Beans

Utilize that half bag of tortilla chips into an egg dish packed with protein that is also perfect to serve any time of day.

Ingredients

> 2 tbsp olive oil, divided
> 1 small onion, finely chopped
> 1 jalapeno, seeded and finely chopped, plus more to serve
> 2 cloves garlic, minced
> 1 (12 oz) pkg Nature's Promise® Chorizo Chicken Sausage, cut into 1-inch-thick half-moon slices
> 1 (15.5 oz) can low-sodium black beans, drained and rinsed
> 5 large eggs
> 1/2 cup low-sodium chicken broth
> 1/2 (1 oz) packet low-sodium taco seasoning mix
> 4 cups crushed tortilla chips
> 1/2 cup shredded reduced-fat Mexican cheese blend

To Serve (Optional):

> Fresh salsa
> Sliced avocado
> Chopped cilantro
> Sour cream

In a 12-inch nonstick skillet, heat oil on medium. Add the onion, jalapeño, garlic, and chorizo. Season with salt and pepper. Stir in the black beans. Cook 5–7 min., until softened, stirring occasionally.

Meanwhile, in a large bowl, whisk together the eggs, chicken broth, and taco seasoning. Gently mix in the crushed tortilla chips. To skillet, add eggs and chip mixture. Cook 1–2 min., until eggs are almost set, stirring often. Stir in the cheese and remove from heat.

To serve, divide egg mixture among 4 plates. If desired, top each serving with the salsa, avocado, cilantro, sour cream, and jalapeño.
