Egg Salad Sandwiches

This classic egg salad sandwich recipe is made even easier and faster with store-bought hard-cooked eggs in a no-cook lunch or dinner.

Ingredients

> 2 (9.3 oz) bags Nature's Promise® Organic Hard-Cooked Eggs or 12 hard-boiled eggs
> 1/4 cup mayonnaise
> 1 tbsp Dijon mustard
> 2 tsp apple cider vinegar
> 1/4 tsp paprika
> 8 butter lettuce leaves
> 8 slices whole-wheat bread

Steps

Place the hard-cooked eggs in a large bowl and mash gently with a fork. Stir in the mayonnaise, mustard, vinegar, and paprika. Season with salt and pepper.

Layer 1–2 lettuce leaves on 4 slices of bread. Divide egg salad among sandwiches and top with bread slices.

Tips

To make your own hard-boiled eggs, place the eggs in a large pot and add enough cold water to cover by 2 inches. Heat to a boil on high. Cover and remove from heat. Let stand 12 min. Drain and rinse with cold water until cool.
