Ingredients

1 tbsp olive oil

1 (12 oz) pkg fresh fajita blend (peppers and onions)

1 (15 oz) can diced tomatoes

1 (15.5 oz) can low-sodium black beans, drained and rinsed

1/2 (16 oz) bag frozen corn, thawed

1 (8.8 oz) pkg Nature's Promise ® Precooked Brown Rice
>
1/2 (1.25 oz) packet taco seasoning mix
>
2 cups shredded rotisserie chicken
>
1/2 cup shredded Cheddar cheese
>
1 ripe avocado, sliced
To Serve:
>
Sour cream
>
Chopped fresh cilantro

In a 12-inch cast-iron skillet, heat the oil on medium-high. Add the peppers and onions and cook 6–8 min., until tender, stirring occasionally. Season with salt and pepper. Add the tomatoes, beans, corn, rice, and taco seasoning. Stir to combine. Reduce heat to low and simmer 5 min.

Stir in the chicken. Season with salt and pepper. Heat until warmed through. Top with the cheese and remove from heat. Serve topped with the avocado, sour cream, and cilantro.
