4 (3 oz each) flounder fillets

1/2 cup all-purpose flour

3 tbsp butter, divided

2 tbsp lemon juice

2 tbsp capers, drained

Pat the flounder dry with a paper towel. Season fillets with salt and pepper, then dredge in the flour until lightly coated on all sides, shaking off any excess.

In a 12-inch nonstick skillet, melt 1 tbsp butter on medium-high. Add 2 fillets in a single layer and cook 2–3 min. per side, until golden brown. Transfer to a serving platter and loosely cover with foil. Melt another 1 tbsp butter in skillet and cook remaining 2 fillets. Transfer to platter with other fish.

Reduce heat to medium. Add remaining 1 tbsp butter and stir until melted. To skillet, add the lemon juice, 2 tbsp water, and the capers, scraping up any browned bits. Cook 1 min., stirring constantly. Pour lemon-butter sauce over fish and serve immediately.
