Fruit Granitas

Ripe strawberries and sweet lemonade form the base for this easy, icy treat. Swap out strawberries for blueberries for some festive layering that’s perfect for the Fourth of July or any hot summer day.

> 2 lbs strawberries, hulled
> 1/4 cup sugar
> 1 cup lemonade
> Pinch of salt


Quarter the strawberries and add to a blender along with the sugar, lemonade, and salt. Purée until smooth.
Pour mixture into a 9x13-inch metal baking pan. Freeze, uncovered, 30-45 min., until surface begins to freeze. With fork, scrape purée and any ice crystals, stirring together. Repeat scraping 3–4 more times every 40–45 min., until mixture is frozen but still fluffy. Keep frozen until ready to serve. Spoon into small glasses, bowls, or jars to serve.


For a blue version, use 1⅓ cups (½ pint) blackberries and 2⅓ cups (1 pint) blueberries. Replace the lemonade with blue fruit punch or sports drink. Make both red and blue versions and layer them in glasses to serve.
