Garlicky Peanut Chicken and Broccoli

> 1 lb chicken tenderloins
> 1 medium white onion
> 1 tbsp minced garlic
> 1/8 tsp crushed red pepper
> 1 tbsp lower sodium soy sauce
> 1 tbsp canola oil
> 1 (12 oz) pkg broccoli florets
> 1/2 cup honey roast peanuts


Preheat a large pan over medium high heat. Cut the chicken tenderloins into 1 inch pieces and dice the onion. Toss in a bowl and add garlic, red pepper, soy sauce and canola oil. Mix well, and add to hot pan.
Brown chicken on all sides; about 5 minutes. Add broccoli florets to and pour 2 tablespoons of water in the pan. Cover with a lid and let broccoli steam for 2-3 minutes.
Remove lid. Stir broccoli into the chicken mixture. Continue to cook until all liquid is evaporated from the pan.
Roughly chop the peanuts. Bowl up chicken and broccoli and sprinkle chopped nuts over top. Enjoy!
