Gnocchi with Arugula, Tomatoes, and Bacon

Ingredients

> 1 (16 oz) pkg gnocchi
> 2 cups mixed cherry tomatoes
> 2 tbsp olive oil
> 7 slices precooked bacon
> 1 cup arugula
> 2 tbsp basil
> ¼ cup shaved Pecorino Romano

Cook gnocchi according to package directions. Meanwhile, halve the tomatoes and sauté in the olive oil for 6 min. on medium heat.

Chop the bacon and add to the tomato mixture. Cook for 1 min. Drain the gnocchi and add to the pan with the tomatoes and bacon. Stir until gnocchi are fully coated. Turn off the heat, add the arugula and toss gently. Garnish with fresh basil and Pecorino romano.
