> 1 small cantaloupe
> 1/4 cup smoked almonds
> 3 cups arugula
> 2 tbsp olive oil
> 2 tbsp balsamic vinegar
> 1/4 cup crumbled feta
Set grill to medium-high. Cut the cantaloupe in half. With a spoon, scrape out and discard seeds. Cut peel off cantaloupe. Cut each half into 1-inch-wide wedges.
Grill cantaloupe 2 min. per side, until grill marks appear. Remove from grill and place on a paper towel. Let cool slightly.
Meanwhile, finely chop the almonds. On a large platter, arrange the arugula and top with cantaloupe wedges. Drizzle the oil and vinegar over cantaloupe. Sprinkle the feta and almonds on top. Season with salt to taste.
