Ingredients

2 tbsp olive oil

1 1/2 lb lean beef stew meat, cubed

1 tsp coarse salt

1 tsp ground black pepper

2 tbsp flour
>
4 large Yukon Golden potatoes, diced

2 large carrots, peeled and diced
>
2 large parsnips, peeled and diced
>
1/2 large yellow onion, chopped
>
2 garlic cloves, minced
>
1 tbsp tomato paste
>
4 cups beef broth
>
1 11.2 oz bottle of Guinness beer
Steps

Cook 1 ½ lb beef stew meat in a pan over medium-high heat until brown.

Add diced potatoes, diced carrots, diced parsnips, chopped onion, minced garlic, and tomato paste to slow cooker.

Add browned beef, beef broth, and Guinness.

Cook for 3-4 hours on high or 8-10 hours on low
