Grilled Halloumi Caprese Salad

Halloumi is a semisoft cheese made from a combination of goat’s and sheep’s milk. Its firmer texture and high melting point make it ideal for grilling or frying, such as in this twist on a classic caprese salad.

Ingredients

> 5 plum tomatoes
> 1/2 baguette
> 1 (8 oz) pkg halloumi cheese
> 3 tbsp olive oil
> 1/4 cup basil leaves
> 2 tbsp balsamic vinegar

Set grill or grill pan to high heat. Slice the tomatoes in half lengthwise. Using a serrated knife, cut the baguette in half lengthwise and cut each half into 6 equal pieces. Cut the halloumi into ½-inch-thick slabs and pat dry with paper towels. Brush the oil onto tomatoes, halloumi, and bread. Season tomatoes and halloumi with salt and pepper.

Add tomatoes, halloumi, and bread to grill. Cook bread 1–2 min. on each side, until lightly toasted. Cook the tomatoes and halloumi 2–3 min. per side. On a serving platter, arrange grilled halloumi and tomatoes. Top with the basil leaves and drizzle with the balsamic vinegar. Serve caprese salad with grilled bread.

Tips

If you can’t find halloumi, try grilling feta instead: Place a cast-iron skillet or ramekin onto the grill to preheat. Add a block of feta to preheated skillet and cook 10 min., until golden brown.
