Grilled Potato Salad with Herbs

Grilling tender baby potatoes give this easy, tangy potato salad a slightly smoky flavor. Herbs and an oil-based dressing make this lighter than traditional potato salad.

Ingredients

> Cooking spray
> 2 (24 oz) bags Nature's Promise ® Organic Baby Gold Potatoes
> 5 tbsp olive oil, divided
> 2 tbsp red wine vinegar
> 2 tbsp Dijon mustard
> 3 stalks celery, diced
> 1/2 cup finely chopped chives
> 1/2 cup finely chopped dill
> 1/2 cup finely chopped parsley

Coat grill grates with the cooking spray. Set grill to medium-high. Bring a large pot of salted water to a boil. Add the potatoes to pot and cook 7–10 min., until just tender. Drain in a colander and pat dry with paper towels. Cut potatoes in half. Toss potatoes with 2 tbsp oil and season with salt and pepper.

Add potatoes to grill cut-side down. Cook potatoes 5–10 min., until browned and tender, turning occasionally.

Meanwhile, in a large bowl, combine remaining 3 tbsp oil, vinegar, and mustard. Season with salt and pepper. Stir in the celery, herbs, and potatoes. Serve immediately.

Tips

If your potatoes are smaller and might fall through the grill grates, cook the potatoes in a grill pan on the stovetop for the same amount of time.
