1 large red bell pepper

1/2 cup prepared guacamole

4 (8-inch) flour tortillas

4 slices Monterey Jack cheese

2 cups shredded rotisserie chicken

Remove the seeds and thinly slice the bell pepper.

Spread 2 tbsp guacamole onto each tortilla. Top with the cheese, then chicken and bell pepper. Roll up each tortilla like a pinwheel and serve.
