2 1/4 cups all-purpose flour

1 cup whole-wheat flour

1 1/2 tsp baking soda

2 tbsp sugar

1 1/2 tsp salt

4 tbsp (1/2 stick) cold unsalted butter, cubed

1 cup low-fat buttermilk

1/2 cup Guinness
>
1/4 cup maple syrup

1 large egg, beaten
>
3/4 cup raisins
>
2 tsp caraway seeds (optional)

Preheat oven to 400°F. Place a 10-inch cast-iron pan in oven. In a large bowl, combine the flours, baking soda, sugar, and salt. To bowl, add the butter and, using clean hands or a fork, work butter into flour mixture until it resembles coarse crumbs.

Make a well in the center of the flour mixture and add in the buttermilk, Guinness, maple syrup, and egg. Stir until just combined. Add the raisins and caraway seeds, if using. Mix until evenly distributed.

Dump dough onto a floured surface. Sprinkle the dough with flour, and lightly knead dough to shape into a ball. Carefully remove cast-iron pan from oven. Line pan with parchment. Place dough into pan. Score top of dough with an “X” about 1 inch deep.

Place bread in oven and reduce temperature to 350°F. Bake for 45–55 min., until toothpick inserted into center comes out clean.
