Ham and Broccoli Quiche

Don't worry about flipping any eggs—this quiche is a great brunch alternative to individual omelets. Broccoli, ham and cheese satisfy, while cottage cheese gives it heft—and by using egg substitute and nonfat Greek yogurt, you help keep cholesterol under control.

> 1 cup egg substitute
> 1 cup nonfat plain Greek yogurt
> 1 cup 1% cottage cheese
> 1/4 cup whole wheat flour
> 1 tsp garlic powder
> 1/4 tsp ground black pepper
> 1 tsp canola oil
> 1/2 cup sliced red onion
> 1 cup cubed ham
> 1 cup broccoli florets, cut into small pieces
> 1/2 cup shredded Swiss cheese


Preheat oven to 325°F. Spray 9-inch round pie dish with cooking spray.
In a medium bowl, combine egg substitute, Greek yogurt, cottage cheese, flour, garlic powder and pepper and stir together until smooth and set aside.
Add oil to a small saucepan over medium heat. Add red onion and sauté until tender. Mix in ham and sauté until warm. Remove from heat and set aside.
In a medium microwave-safe bowl, add broccoli and 2 Tablespoons of water, microwave on high for 2 minutes until tender, but still crisp.
Add onions, ham, broccoli and 1/4 cup of cheese to egg mixture. Pour mixture into pie dish and top with remaining cheese. Bake until set, about 45 minutes.
