Herbed New Potatoes

The beauty of new potatoes is that they're easy, flavorful, packed with nutrients and go with just about anything. If they're small enough you don't need to quarter them— just boil, toss in this aromatic chives and dill mixture and serve.

> 1 lb small new red potatoes
> 1/4 cup snipped fresh chives
> 1 tbsp chopped fresh dill
> 1/4 tsp kosher salt
> Ground black pepper


Quarter potatoes and place in a medium saucepan with enough water to cover. Bring to a boil, reduce heat and simmer approximately 20 minutes or until tender.
Toss potatoes with chives, dill, salt and pepper. Serve warm.
