2 bell peppers

2 zucchini

5 oz whole white mushrooms

1 red onion

2 tbsp olive oil

3 tbsp Holland House ® Organic White Wine Vinegar

zest of 1 lemon

salt & ground black pepper

To prep the vegetables: cut bell peppers into 1 inch pieces, slice zucchini into ½ inch thick rounds, remove the stems from the mushrooms, and dice the onion into 1 inch pieces.

Combine all the vegetables and remaining ingredients in a large bowl or resealable bag. Marinate for at least 20 minutes.

Skewer the vegetables, making sure they are evenly spaced. Grill until tender, flipping occasionally, about 10-12 minutes.
