Horseradish Beef and Caramelized Onion French Dip

Ingredients

> 1 tbsp canola oil
> 1 large white onion
> 1 (16 oz) can low sodium beef broth
> 1 fresh French baguette
> 8 thin slices Swiss cheese
> 1 lb thinly sliced Taste of Inspirations® Horseradish Roast Beef

Heat a medium size skillet over medium high heat with the canola oil. Peel and thinly slice the onion and add to the pan. Cook for 5-6 minutes, stirring often, until onions are lightly browned and soft. Remove from the pan and set aside.

Add the broth to the hot pan, scraping the bottom of the pan to release any browned bits. Reduce heat to low, and the roast beef to the hot broth to warm.

Turn oven onto HIGH broil and set rack 8 inches from the top of the oven. Cut the baguette into 4 equal sized pieces and split. Layer the cheese, hot roast beef (use tongs to remove from the hot liquid), and onions into the bread. Broil for 2-3 minutes or until bread is warm and cheese is melted. Serve with the beef broth on the side for dipping.
