> 1/2 cup Nature's Promise® Organic Hummus
> 8 slices whole-wheat bread, toasted
> 2 cups Grilled and Marinated Vegetables (see below)
> 1 (4 oz) pkg goat cheese

Grilled and Marinated Vegetables

> Red onions
> Zucchini
> Eggplant
> Bell peppers


Spread the hummus onto 4 slices of bread. Stack the red onions, zucchini, eggplant, and bell peppers onto hummus. Divide the goat cheese among the sandwiches and top with remaining 4 slices of bread.
