Instant Pot® Colombian Chicken and Potato Stew

Ingredients

> 8 chicken drumsticks, skin removed
> 1 large onion
> 8 Roma tomatoes
> 1 (24 oz) bag baby yellow potatoes
> 2 packets Goya Sazon Coriander & Annatto Seasoning

Pat the chicken dry and season all over with salt and pepper. Add to the Instant Pot®. Halve and then thinly slice the onion. Core and halve the tomatoes.

Transfer the potatoes, onion, and tomatoes to the Instant Pot®, along with the sazón seasoning and ¼ cup water. Season with salt and pepper. Seal and set to high pressure. Cook 15 min., then natural release for 10 min. Season again with salt and pepper.

Tips

Garnish with chopped cilantro, if desired.
