Jerk chicken gets its unique island flavor from allspice and cinnamon, spices traditionally used in desserts. In a savory dish, the spices become smoky, even more so when cooked on the grill. Marinate the chicken overnight for optimal, bold flavor.

> 1 lb Nature's Promise chicken breast
> 1 lime, cut in half
> 1/2 cup chopped red onion
> 1 1/2 tsp dried thyme
> 1 tsp ground allspice
> 1 tsp ground cinnamon
> 1 tsp ground black pepper
> 1/4 tsp cayenne pepper (or more, to taste)
> 2 tsp minced garlic
> 1 tbsp canola oil


Rub the chicken with lime, lightly squeezing the lime as you go over the chicken breast. In a small bowl, combine remaining ingredients. Rub the seasoning mixture over chicken. Place in a baking dish or plastic bag and allow to marinate in the refrigerator for 1 hour of overnight for the best flavor. Heat grill to medium heat and cook until internal temperature reaches 165°F, turning often.
