Korean-Inspired Chicken and Tofu Wraps

Tofu mixes in seamlessly with chicken in these little lettuce wraps for some extra veggie-based protein.

Ingredients

> 1 (14 oz) pkg Nature's Promise Organic Firm Tofu
> 3 green onions
> 2 tbsp sesame oil
> 8 oz ground chicken or turkey
> 1 tbsp minced garlic
> 2 tbsp reduced-sodium soy sauce
> 1 tbsp miso paste
> 1 large head Boston or Bibb lettuce
> 2 cups shredded or matchstick carrots
> 1 cup kimchi

Drain the tofu and pat dry with paper towels. Thinly slice the green onions, reserving some darker green parts for garnish.

In a 12-inch skillet, heat the oil on medium. Add the chicken and garlic. Cook 5 min., breaking up with back of wooden spoon. Season with salt. Stir in soy sauce, miso paste, and green onions. Cook 1 min. Crumble tofu into skillet. Cook 2–4 min., until chicken is cooked through, stirring often to break up tofu.

Meanwhile, separate and wash the leaves of the lettuce. Serve the tofu mixture in the lettuce leaves. Top with carrots, kimchi, and reserved green onions.
