Meatless “Chicken” Italiano Melt

Ingredients

> 1 (10.25 oz) bag frozen meatless chicken strips
> 1 tbsp olive oil
> 1/2 large bell pepper
> 1/2 large white onion
> 1 tbsp minced garlic
> 2 cups fresh baby spinach
> 4 sandwich rolls
> 1.2 cup marinara sauce
> 1 cup shredded mozzarella

Preheat a 12 inch nonstick skillet over medium high heat. Add the olive oil and chicken strips. Cook for 2-3 minutes per side or until browned.

Meanwhile, thinly slice the onion and pepper into strip and add to the pan along with the garlic. Continue to cook, stirring occasionally, until vegetables are tender; about 4-5 minutes.

Toss in the fresh spinach and turn off the heat. Preheat the oven to HIGH broil and slice the rolls and place on a baking sheet.

Divide the meatless chicken strip and vegetable mixture between the rolls. Drizzle with marina sauce and top with cheese. Broil for 2-3 minutes or until cheese is melted and rolls are lightly browned.
