Ingredients

1 cup couscous

1 cup boiling water

2 tbsp olive oil, divided

1 lb 93% lean ground beef

1 tsp ground cumin
>
1 tsp paprika
>
1 cup Nature's Promise® Original Hummus
>
2 medium tomatoes, diced
>
1/2 (8 oz) bag shredded lettuce
>
1/4 small red onion, thinly sliced
>
1 cup pita chips

Add the couscous to a medium heat-proof bowl. Stir in the boiling water, 1 tbsp oil, and salt. Cover with a lid or foil and let sit 5 min., until liquid is absorbed. Fluff with fork.

Meanwhile, in a 12-inch skillet, heat remaining 1 tbsp oil on medium-high. Add the beef, season with salt and pepper, and cook 6–8 min., until browned and cooked through, breaking up meat with back of spoon and stirring frequently. Stir in the cumin and paprika and cook 1 min. more, stirring constantly.

Divide couscous among 4 bowls. Top with beef, hummus, tomatoes, lettuce, and onion. Coarsely crumble the pita chips on top.
