Mini Fillo Quiches

Delicate fillo shells filled with cheesy eggs and bacon make these bite-sized morsels an Easter brunch must.

Ingredients

> 1 (1.9 oz) pkg mini fillo shells
> 2 slices bacon
> 1 tbsp olive oil
> 1/2 cup diced onion
> 2 large eggs
> 2 tbsp low-fat milk
> 3  basil leaves
> 1/4 cup shredded Gruyère cheese

Preheat the oven to 350°F and arrange the fillo shells on a parchment-lined baking sheet. Dice the bacon.

In a skillet over medium-high heat, add the oil and cook the bacon for 3 min. or until slightly crispy. Add the onion and continue to cook for 4 min. or until onion is soft and translucent. Transfer to a bowl.

Meanwhile, whisk the eggs together with the milk. Season with salt and pepper. Thinly slice the basil. Divide bacon-onion mixture among all shells using a teaspoon and top with whisked egg mixture. Finish each with equal parts basil and Gruyere, and bake for 10 min., or until egg is cooked fully.
