Ingredients

> 2/3 cup + 1 tbsp vegetable oil, divided
> 1 small yellow onion, thinly sliced
> 2 tbsp miso paste
> 2 tbsp rice vinegar
> 2 tbsp unsalted butter, softened
> 4 tsp maple syrup
> 2 lbs green beans, trimmed

Steps

1
To a large skillet, add ⅔ cup oil and sliced onion. Heat over medium-low, letting onions fry gently, stirring occasionally, until light golden brown, about 15 to 20 minutes. Using a slotted spoon, drain onions on a paper towel-lined plate and season with salt. Set aside.
2
Preheat oven to 400°F. In a medium bowl, combine miso, rice vinegar, butter and maple syrup.
3
On a rimmed baking sheet, toss green beans with remaining 1 tablespoon oil. Season with salt and pepper. Transfer to oven and roast until browned in spots, 8 to 9 minutes. Spoon miso glaze over green beans and toss to coat. Return to oven and cook 2 minutes more.
4
Transfer roasted green beans to a serving platter and top with crispy fried onions.
