Not-Your-Grandma’s Meatloaf

Ingredients

> 2 tbsp olive oil
> 1 (8 oz) container diced peppers
> 1/2 cup diced onions
> 1 tbsp minced garlic
> 3/4 cup gluten-free panko bread crumbs
> 1/4 cup whole milk
> 2 large eggs
> 1 lb 90% lean ground beef
> 1 lb ground pork
> Ketchup, optional

Steps

1
Preheat oven to 450°F. Line a rimmed baking sheet with foil. In a 12-inch skillet, heat the oil on medium-high. Add the peppers, onions, and garlic. Season with salt. Cook 3 min., stirring often. Let mixture cool slightly.
2
Meanwhile, in a large bowl, mix the bread crumbs, milk, and eggs. Add vegetable mixture to bowl, along with beef and pork. Gently mix until combined.
3
Divide meat mixture into 3 mounds on the baking sheet. Shape each into a 3-inch-wide, 7-inch-long loaf. Bake 25 min., until internal temperature reaches 160°F.

Tips

Just slather the top with ketchup just before placing it in the oven. Garnish with chopped parsley.
