Oatmeal-Raisin Mug Cookie

With banana, hearty oats, raisins, and walnuts, this mug cookie can work as an easy breakfast or the perfect afternoon snack.

> Cooking spray
> 1/2 ripe banana, sliced
> 1 large egg
> 1/2 cup old-fashioned rolled oats
> 1/4 cup low-fat milk or plant-based milk
> 1/4 tsp baking soda
> 1/4 tsp ground cinnamon, plus more to garnish
> Pinch of salt
> 1 tbsp raisins
> 1 tbsp chopped walnuts
> 2 tsp chocolate chips or mini chocolate chips (optional)
> Plain or vanilla nonfat Greek yogurt, to serve (optional)


Coat an 8-oz microwave-safe mug with the cooking spray. In a blender or food processor, combine the banana, egg, oats, milk, baking soda, cinnamon, and salt. Pulse until smooth. Transfer to prepared mug. Stir in the raisins, nuts, and chocolate, if using.
Microwave on high 1–2 min., until cookie stops rising and is set on top. Let cool slightly. Dollop top with yogurt and sprinkle with a pinch of cinnamon, if desired.


Garnish with more raisins and walnuts.
