Ingredients

1 lb apples (around 3 apples)

3 large eggs, room temperature

1 cup granulated sugar

1/2 cup walnuts and/or pecans, chopped

3/4 cup canola oil

2 tsp vanilla extract

3 cups all-purpose flour, plus more for dusting

2 1/2 tsp apple pie spice or cinnamon, divided
>
2 tsp baking soda
>
1/2 tsp salt
>
3/4 cup confectioners' sugar
>
2 tbsp honey
>
1 tbsp low-fat milk

Preheat oven to 325°F. Grease and flour a 10-inch Bundt pan. Peel the apples. Using a box grater, grate the apples into a large bowl for around 4 cups of grated apple. Add the eggs, granulated sugar, nuts, oil, and vanilla. Mix well to combine.

To bowl, add the flour, 2 tsp apple pie spice, baking soda, and salt. Stir to combine. Pour into prepared pan. Bake 40–50 min., until toothpick inserted into center comes out clean. Let cool 15 min. before glazing.

To make the glaze, in a medium bowl, whisk together the confectioners’ sugar, honey, remaining ½ tsp apple pie spice, and milk until smooth. Drizzle glaze over top.
