Kid-Friendly Colorful Salad

Introducing a great way to get your kids to eat their veggies. Have them help you make this colorful salad featuring pineapple chunks, cherry tomatoes and pecans. Your child can even help make the dressing to top the salad with when you're done.

Ingredients

> 2 cups red leaf, green leaf or romaine lettuce
> 1 (8 - ounce) can pineapple chunks, juice reserved
> 12 cherry tomatoes, halved
> 1/2 green bell pepper, sliced
> 1/2 cup pecan halves or sliced almonds
> 2 tbsp canola oil
> 2 tbsp lemon juice
> 1 tbsp honey
> 1 tsp Dijon mustard
> 1/2 tsp poppy seeds (optional)
> Freshly ground black pepper, to taste

CHILD: Rinse and drain lettuce; tear into bite-size pieces.

ADULT and CHILD: Drain pineapple chunks, reserving juice.

ADULT: Slice tomatoes and peppers.

CHILD: Put lettuce, pineapple chunks, tomatoes, green pepper and nuts in a large salad bowl.

CHILD: In a screw-top jar, combine vegetable oil, 1/4 cup reserved pineapple juice, lemon juice, honey, mustard and poppy seeds; mix well. Drizzle dressing over lettuce mixture. Season with pepper. Toss gently to mix.
