Oven-Toasted Goat Cheese and Sun Dried Tomato Sandwiches

Baking these cheese sandwiches is so much easier than frying them, plus it cuts down on fat.

Ingredients

> 8 slices rye bread
> Nature's Promise® olive oil cooking spray
> 1/2 cup oil-packed sundried tomatoes , drained
> 8 oz goat cheese
> 1/2 cup chopped pecans

Preheat the oven to 400ºF. Spray one side of each slice of bread with olive oil spray. Thinly slice sun dried tomatoes. Mix together goat cheese, sun dried tomatoes and chopped pecans.

Place 4 slices of bread, oiled side down, on a baking sheet. Spread with cheese mixture. Top with the remaining slices, oiled side out. Bake 10 min., or until golden and crisp.
