Pancake Breakfast Tacos

Ingredients

> 1/2 lb turkey breakfast sausage links
> 6 large eggs
> 1/2 cup shredded reduced-fat Cheddar cheese
> 8 frozen buttermilk pancakes
> Maple syrup, to serve

Remove the casings from the sausage. Heat a greased 10-inch nonstick skillet on medium-high. Add sausage and cook 5–6 min., until browned and cooked through, breaking up large pieces with a wooden spoon.

Meanwhile, in a medium bowl, whisk the eggs until smooth. Stir in the cheese. Season with salt and pepper. When sausage is cooked, add egg mixture to skillet. Cook 1–2 min., until eggs are just set, stirring occasionally. Remove from heat and cover to keep warm.

Microwave the pancakes according to package directions. Divide egg mixture among pancakes and fold into tacos. Serve with the maple syrup.
