Pasta Salad with Red Wine Vinaigrette

> 2 (1 lb) boxes fusilli
> 1 clove garlic
> 1/3 cup red wine vinegar
> 1/4 cup mayonnaise
> 1 tbsp lemon juice
> 1 tsp sugar
> 1 tsp dried oregano
> 1/2 cup olive oil
> 1/4 cup finely chopped parsley


Cook the fusilli according to package directions.
Meanwhile, with garlic press, crush the garlic into a very large bowl. Add the vinegar, mayonnaise, lemon juice, sugar, oregano, and olive oil. Whisk to combine. Season with salt and pepper to taste.
Drain pasta and rinse with cold water until cool. Add to bowl with vinaigrette and toss until well coated. Fold in the parsley.
