Pasta with Fresh Tomatoes

This pasta dish uses fresh tomatoes rather than canned sauce for a lighter, garlic-infused flavor in this simple, vegan dish. Once your pasta is cooked, sauté some onions and garlic to accompany the warmed tomatoes for a deeper flavor.

> 8 oz capellini pasta or angel hair pasta
> 1 tbsp olive oil
> 1/2 cup chopped onion
> 2 tsp minced garlic
> 2 cups diced tomatoes
> 2 tbsp fresh oregano leaves, chopped
> Salt to taste
> Ground black pepper to taste


Cook pasta according to package directions.
Meanwhile, heat oil in a large skillet over medium heat.
Saute onions and garlic in oil just until soft.
Add tomatoes and heat just until warm.
Serve tomatoes over pasta and sprinkle with oregano. Season with salt and pepper to taste.
