2 sticks butter

2/3 cup sugar

2/3 cup chunky peanut butter

2 1/2 cups flour

1/2 cup hot chocolate mix

3/4 cup confectioners' sugar, sifted

Preheat the oven to 350°F. In a large bowl with the mixer on medium, beat butter, sugar, and salt until light and fluffy. Beat in the peanut butter. Add the flour and hot chocolate mix and beat until just combined.

Scoop and roll into 1-inch balls and place on 2 parchment-lined baking sheets. Bake 12–15 min., until bottoms are golden brown. Let cool completely on baking sheets. Place the confectioners sugar in a shallow bowl. Roll each cookie in confectioners sugar until well coated.
