Peruvian Stir-Fried Beef with French Fries

This Peruvian stir-fry known as Lomo Saltado combines frozen french fries and sirloin steak for a kid-friendly winning dinner. Try swapping chicken instead of beef for another variation.

Ingredients

> 1/2 (32 oz) bag frozen French fries
> 1 medium red onion
> 3 plum tomatoes
> 1 lb sirloin steak
> 2 tbsp canola oil, divided
> 2 cloves garlic, minced
> 1 jalapeno, thinly sliced (optional)
> 1 tbsp low-sodium soy sauce
> 1 tbsp lime juice
> 2 tbsp chopped cilantro
> 2 (8.8 oz) pkgs Nature's Promise® Long Grain White Rice

Preheat oven to 425°F. Add the french fries to a baking sheet and cook 10–12 min., or according to package directions. Meanwhile, thinly slice the onion. Core the tomatoes and cut into wedges. Thinly slice the steak into 1-inch strips.

In a 12-inch skillet, heat 1 tbsp oil on high. Add steak strips and season with salt and pepper. Cook 5–6 min., until browned, stirring occasionally. Transfer to a plate.

To skillet, add remaining 1 tbsp oil and heat on medium-high. Add onion and cook 5–6 min., until softened. Reduce heat to medium. Stir in tomatoes, garlic, and jalapeño, if using. Cook 2–3 min., until tomatoes have released some juices, stirring constantly. Season mixture with salt and pepper.

To skillet, stir in the soy sauce and lime juice. Return steak to skillet. Add the cilantro and cooked fries. Cook the rice according to package directions and serve on the side with stir-fry.
