Ingredients

> 1 (1 1/4 lb) pork tenderloin
> 2 tsp smoked paprika
> 1/2 cup finely chopped strawberries
> 1/2 cup pico de gallo
> 1 avocado

Preheat oven to 425°F. Season the pork with the paprika, salt, and pepper. To a 12-inch greased skillet, add pork and cook 5–7 min., until browned on all sides. Transfer pork to a foil-lined baking sheet. Roast 15–20 min., until a meat thermometer reaches 145°F, flipping halfway through. Let rest 5 min.

Meanwhile, in a small bowl, combine the strawberries and pico de gallo. Halve, remove pit, and finely dice the avocado. Stir into the salsa mixture. Season with salt and pepper. Thinly slice pork tenderloin and serve with salsa.
