Pulled Pork Taquito Diplomas

Quick to make and even easier to eat, these crispy pork and cheese taquitos double as adorable diplomas for any graduation celebration.

Ingredients

> Cooking spray
> 1 (16 oz) pkg store-bought pulled pork
> 1 cup shredded reduced-fat Cheddar cheese
> 12 (6-inch) white flour tortillas
> 1 (0.5 oz) pkg Nature's Promise ® Organic Chives
> 3/4 cup store-bought queso (optional)

Preheat oven to 425°F. Line a baking sheet with foil and coat foil with the cooking spray. In a medium bowl, combine the pork and cheese.

Wrap the tortillas in damp paper towels. Microwave 30 sec.–1 min., until tortillas are warm and pliable. Place about 2 tbsp pork filling down the center of 1 tortilla. Roll up tightly and place roll seam-side down on prepared baking sheet. Repeat with remaining tortillas and filling.

Generously coat taquitos with cooking spray. Bake 20 min., until taquitos are golden brown and crispy. Let cool slightly. Tie 1 or 2 chives around each taquito so it resembles a diploma. If using, add the queso to a microwave-safe bowl and heat 1–2 min., until warmed, stirring halfway through. Serve taquitos with queso for dipping.
