Pumpkin Spice Espresso Martini

This festive cocktail has all the goodness of pumpkin spice and an espresso martini in one ready-for-happy-hour package.

For the pumpkin spice simple syrup:

> 1/2 cup brown sugar
> 1/2 cup canned pumpkin puree
> 1 tsp vanilla extract
> 1 tsp pumpkin pie spice

For the cocktail:

> 3 tbsp vodka
> 1/4 cup unsweetened cold brew concentrate or cooled espresso
> 2 tbsp Bailey's™ Irish Cream
> 1/4 cup pumpkin spice simple syrup
> Coffee beans, to garnish (optional)

To make the simple syrup: To a small saucepan on medium heat, add 1/2 cup water, brown sugar, pumpkin purée, vanilla, and pumpkin pie spice. Cook 5 min., until sugar dissolves, stirring occasionally. Remove from heat and let steep at least 15 min. Pour simple syrup into a resealable jar and let cool to room temperature. Refrigerate for up to 10 days.

To make the cocktail: Add the vodka, cold brew or cooled espresso, Irish cream, and 1/4 cup simple syrup to a cocktail shaker. Fill shaker with ice and shake 30 sec.­–1 min. Strain into 2 martini glasses and, if desired, garnish with the coffee beans.
