Quiche Lorraine

Utilizing both precooked bacon and a premade pie crust, this classic French quiche is as easy as can be. It is the perfect make-ahead dish for brunch or lunch.

Ingredients

> 1 (2.1 oz) pkg fully cooked bacon
> 1 (9-inch) frozen deep dish pie crust, thawed
> 6 large eggs
> 1/2 cup low-fat milk
> 1 (6 oz) pkg finely shredded Swiss cheese

Steps

Preheat oven to 375°F. Microwave the bacon according to package directions. Let cool slightly, then crumble into pieces. Place the pie crust on a rimmed baking sheet.

In a large bowl, whisk together the eggs and milk. Season with salt and pepper. To bowl, stir in bacon and half of the Swiss cheese. Pour egg mixture into pie crust. Top with remaining cheese.

Bake 35–40 min., until quiche is set in center. Allow quiche to cool 15 min. before serving. Serve hot, cold, or at room temperature.
