Quick Broiled Veggies

This no-fail method for roasting fresh veggies is fast and delicious. Campari tomatoes, red onion, and zucchini are ready in just 20 minutes.

Ingredients

> 2 lbs campari tomatoes on the vine
> 1 red onion, skin removed
> 2 zucchini
> 3 tbsp olive oil

Steps

Set the oven to broil. Line a baking sheet with foil. Quarter the tomatoes and onion, breaking the onion layers apart. Slice the zucchini. Set prepped veggies in a bowl and toss with olive oil.

Spread veggies across the baking sheet and season with salt (in moderation) and pepper. Broil for 10 min. until tender, tossing halfway.
